Heidi's Winning Salmon

Congratulations to Alliance Catering's Heidi Bath-Risbridger finalist in the Hospitality Standards Institute* Modern Apprentice of the Year Competition.

Heidi, an apprentice at Minter Ellison Rudd Watts, Auckland made the decision to enter the competition at the last minute. In just one week Heidi created a recipe, produced her dish, photographed it and recorded a video. Her hard work paid off with her dish (pictured below) selected for the final. Heidi will compete against seven other apprentice finalists vying for the title of Cookery Modern Apprentice of the Year.

Heidi and her pan fried salmon with crispy skin on watercress, buffalo scallops on taramasalata with chive oil, served with a herb potato gratin.

Brad Gifford, Chef and Site Manager at Minter Ellison Rudd Watts Lawyers, said that “having an Apprentice like Heidi is refreshing as she pushes herself and never settles for second best. I see Heidi going a long way as a Chef.”

The competition final will he held on Tuesday 21 August, at the New Zealand Culinary Fare in Auckland. The winner will receive a trip to the 2013 Melbourne Food and Wine Festival, and the opportunity to attend master classes with international chefs and front of house stars. To win Heidi will have to create recipes for a two-course menu and then cook these dishes within three hours.
